Care & Maintenance
Proper use, storage and maintenance will help extend the life of your AMT cookware. Our comprehensive AMT user guide is provided in both English & French.

1. Before using the cookware for the first time, remove the packaging and sticker from the bottom of the cookware.

2. Cookware should be washed with soap and water and then wiped dry. Strong detergents, brushes, rough or wire scrubbers are not recommended.

3. Place the cookware on the proper sized burner or element on your cook top. The element should match the size of the base of the cookware. This will maximize energy efficiency while cooking. For Induction cookware (a red induction symbol will be indicated on the cookware packaging) it is also important to use the proper sized burner or element. In some cases, if using a small pan on a large element, the cook top may not respond to the bottom of the dish.

4. Heat up your AMT cookware using a high temperature setting for about 1-2 minutes. To check if a pan is properly heated, put a small amount of water on the flat tab piece of the pan (illustrated in the picture shown). If the pan is properly heated the water placed on the tab piece should boil (air bubbles will be visible). AMT cookware distributes heat evenly across the entire product surface. Only use a high temperature setting to heat the cookware initially, then reduce the temperature to medium or low. The maximum warm-up time should not exceed 5 minutes. Do not overheat the pan, as keeping the temperature too high for too long can damage the non-stick coating. Do not leave the cookware unattended when the oven is turned on.

Attention! 
The entire surface of the pan will be VERY hot! Do not touch the hot pan without kitchen gloves or other proper hand protection.   The Bakelite handles will remain cool enough to handle when used on a cook top.  If they are used in the oven, the handles will become as hot as the pan.  We also recommend the use of one of our detachable handles if you will be using the pans in an oven regularly.  

5. LOTAN® (non-stick coating) is adapted for frying, cooking and baking without using oil / fat. If you decide to use a fat, oil, or non-stick oil spray, etc, make sure they are suitable for frying. Fats and oils have different smoking temperatures. Reduce the temperature when the dish begins to smoke or when you can smell the overheated oil.

6. While cooking, baking or frying it is recommended to use utensils made of soft materials like silicone, wood, or nylon. Never use metal, ceramic, pointed tools or immersion blenders as they will damage the surface of your AMT cookware.

7. AMT cookware can be used in ovens with the handles (except cookware with detachable handles), at a maximum temperature of up to 240°C (450° F). When taking the dish out from the oven, always use a kitchen glove, as the handles also become hot in the oven.

Attention! The maximum temperature for detachable handles is 140° (285°F).  For cookware without handles, or that have stainless steel handles, the maximum temperature is 260° (500°F).

Perfect Sear

Fantastic.   With the removable handle, it can slide from stovetop right into the oven.  And the cooking is so even!  No more moving meats around for even and reliable cook-through.  And the sear is perfect every time.

The perfect pan

My husband and I aren’t professional chefs, but cooking is definitely one of our favourite hobbies.  We’re always trying new recipes and have noticed that having the right pan is absolutely crucial to the process. We’ve been through pan after pan, looking for the perfect one – and now I can honestly say that we found it! This pan was incredible; great heat conduction and heavy enough without being cumbersome. Plus, the non-stick releases foods easily and makes clean up super easy. We used to put pans that needed extra elbow grease in our dishwasher to clean, but have found that we don’t need to with this. This pan is exceptional – we can’t recommend it enough to our friends and family!

Q: What is the AMT Gastroguss A528 frying pan best used for?

A: The A528 is a 28cm frying pan with 5cm walls, suited to searing, sauteing and shallow frying for two to four portions. The 28cm diameter gives enough surface to brown food in a single layer, which is what most general service work needs.

Q: How many portions does a 28cm frying pan hold?

A: A 28cm frying pan comfortably handles two to four portions. The figure that matters is surface area rather than volume: food needs space to brown rather than steam, so a pan that is technically full will not sear properly.

Q: Which hobs work with the A528, and which do not?

A: The A528 works on gas, ceramic and conventional electric hobs. It is the non-induction version, so it is not the correct choice for an induction hob. The A528I is the induction model of the same pan.

Q: Can the A528 go from the hob to the oven?

A: Yes. With the detachable handle removed the pan goes into the oven without a protruding handle, and no oven gloves are needed when handling it. This suits searing on the hob and finishing in the oven in the same pan.

Q: What does a 9mm base change when searing at this diameter?

A: It changes how the pan recovers. The 9mm base distributes heat across the base and up into the side walls, then holds it, so adding cold food does not drop the surface temperature as sharply. That is what keeps a sear from turning into steaming.

Q: Is 28cm too large for a domestic hob?

A: It depends on the element rather than the hob. Match the pan base to the element size. A 28cm pan on a small element heats unevenly and wastes energy, and on some hobs a mismatch stops the hob responding correctly. Where elements are small, the 24cm is the better fit.

Q: Can the A528 be used for sauces and shallow frying as well as searing?

A: Yes. AMT builds the range for multipurpose use, so the same pan will fry, cook and bake. The 5cm wall height carries enough liquid for pan sauces and shallow frying without moving to a deeper pan.

Q: Does the A528 need seasoning before first use?

A: No. The A528 does not need seasoning. The Lotan coating provides the non-stick surface from first use, unlike carbon steel or cast iron, which build a seasoning layer over time. Wash and dry it before first use and it is ready.

Q: How does the A528 hold up to repeat daily use in a commercial kitchen?

A: It is built for professional use. The cast aluminium body and 9mm base are made for repeated heating cycles rather than occasional domestic cooking, and the handle is replaceable, so a worn handle does not take the pan out of service.
