Care & Maintenance
Proper use, storage and maintenance will help extend the life of your AMT cookware. Our comprehensive AMT user guide is provided in both English & French.

1. Before using the cookware for the first time, remove the packaging and sticker from the bottom of the cookware.

2. Cookware should be washed with soap and water and then wiped dry. Strong detergents, brushes, rough or wire scrubbers are not recommended.

3. Place the cookware on the proper sized burner or element on your cook top. The element should match the size of the base of the cookware. This will maximize energy efficiency while cooking. For Induction cookware (a red induction symbol will be indicated on the cookware packaging) it is also important to use the proper sized burner or element. In some cases, if using a small pan on a large element, the cook top may not respond to the bottom of the dish.

4. Heat up your AMT cookware using a high temperature setting for about 1-2 minutes. To check if a pan is properly heated, put a small amount of water on the flat tab piece of the pan (illustrated in the picture shown). If the pan is properly heated the water placed on the tab piece should boil (air bubbles will be visible). AMT cookware distributes heat evenly across the entire product surface. Only use a high temperature setting to heat the cookware initially, then reduce the temperature to medium or low. The maximum warm-up time should not exceed 5 minutes. Do not overheat the pan, as keeping the temperature too high for too long can damage the non-stick coating. Do not leave the cookware unattended when the oven is turned on.

Attention! 
The entire surface of the pan will be VERY hot! Do not touch the hot pan without kitchen gloves or other proper hand protection.   The Bakelite handles will remain cool enough to handle when used on a cook top.  If they are used in the oven, the handles will become as hot as the pan.  We also recommend the use of one of our detachable handles if you will be using the pans in an oven regularly.  

5. LOTAN® (non-stick coating) is adapted for frying, cooking and baking without using oil / fat. If you decide to use a fat, oil, or non-stick oil spray, etc, make sure they are suitable for frying. Fats and oils have different smoking temperatures. Reduce the temperature when the dish begins to smoke or when you can smell the overheated oil.

6. While cooking, baking or frying it is recommended to use utensils made of soft materials like silicone, wood, or nylon. Never use metal, ceramic, pointed tools or immersion blenders as they will damage the surface of your AMT cookware.

7. AMT cookware can be used in ovens with the handles (except cookware with detachable handles), at a maximum temperature of up to 240°C (450° F). When taking the dish out from the oven, always use a kitchen glove, as the handles also become hot in the oven.

Attention! The maximum temperature for detachable handles is 140° (285°F).  For cookware without handles, or that have stainless steel handles, the maximum temperature is 260° (500°F).

Recommend - Easy Cleanup

Just love my new AMT Gastrogus pan and Dick 1905 slicing knife. Super easy cleanup on the pan. It's a real beauty! The knife is my constant companion in the kitchen. Just amazing. So pleased with both purcahses. Will be recommending the AMT pans and Dick knives to family and friends.

Amazingly non-stick, well worth the investment

The pan is amazingly non-stick and so easy to clean. I can cook multiple dishes with just a wipe of the pan with a napkin in between. The surface heats very evenly. Highly recommend this pan. Well worth the investment.

Q: What is the AMT Gastroguss A532 frying pan best used for?

A: The A532 is a 32cm frying pan suited to batch cooking, large cuts and service volumes: four or more portions, a whole fillet, or a quantity of vegetables that would crowd a smaller pan.

Q: How many portions does a 32cm frying pan hold?

A: Four or more, depending on what is being cooked. The advantage is surface area rather than depth: a large base lets everything sit in a single layer, which is what allows a batch to brown instead of steam.

Q: Which hobs work with the A532?

A: Gas, ceramic and conventional electric. It is the non-induction version. On any hob, check the element is large enough, because a 32cm pan over a small element heats in the middle and stays cool at the rim.

Q: Will a 32cm pan fit a domestic hob?

A: Often it will sit on the hob but overhang the element, and it may crowd adjacent burners. Measure the largest element before choosing 32cm. Where elements are modest, two 24cm pans frequently outperform one oversized pan.

Q: Is a large cast aluminium pan heavy to handle?

A: Cast aluminium is lighter than cast iron at the same diameter, and the detachable handle removes the leverage of a long handle when moving a full pan or lifting it into an oven. Weight is still worth considering for a pan this size in daily service.

Q: Does the 9mm base matter more on a large pan?

A: Yes. The larger the base, the further heat has to travel from the element to the rim. The 9mm base spreads heat across the base and into the side walls, which is what keeps the outer edge of a large pan usable.

Q: Can the A532 be used for braising as well as frying?

A: Yes. The 5cm walls carry enough liquid for a shallow braise or a large pan sauce, and AMT builds the range for multipurpose use, so it will fry, cook and bake.

Q: Does a 32cm pan fit in a standard oven?

A: With the handle removed it takes only the width of the pan itself, which is usually what decides whether it fits. Measure the oven interior against the pan diameter before relying on it for oven finishing.

Q: How should a large pan be stored?

A: With the handle detached, pans stack more closely and take far less cupboard or shelf depth. On a 32cm pan that is often the difference between one shelf and two.

Q: What is the difference between the A532 and the A532I?

A: The base. The A532I is built for induction hobs and the A532 is not. Diameter, wall height, cast aluminium body, Lotan coating and detachable handle are identical.
