Profboard cutting sheets are made of high-quality PP (polypropylene). Both sides of the sheets can be used and the material is gentle on your knives. PP is food approved and can either be recycled or disposed of in a way that does not harm the environment. Cutting sheets should be replaced at regular intervals – or when badly scratched to ensure the best possible hygienic practices. Profboard cutting sheets are also dishwasher safe.

The sheets can withstand all common detergents and can be cleaned in the dishwasher or under the tap. If a dishwasher is used, it is very important that the sheets are completely level, otherwise they may tickle during the drying process. The sheets must never be subjected to strain during washing.
Avoid placing hot pots and pans on the sheets, as this will damage them. Cutting sheets are primarily for cold ingredients. For hot dishes, it is instead recommended to use the Carving board. Just like the base board, the sheets will expand when subjected to heat (dishwasher), but they will retract to their original size when cooled back to room temperature. Please note that the base board and sheets only fit together when they are each at room temperature.
Q: What is the red sheet used for?
A: Raw meat. This is the one that matters most. Raw meat carries the highest cross-contamination risk in any kitchen, so it needs a surface that never touches anything ready to eat. This one is sized for the Pro Series 270 base at 30 x 40cm.
Q: Will the 30 x 40cm red sheet fit my board?
A: It fits the Pro Series 270 base at 30 x 40cm. Sheets do not swap between board sizes, so check what your board measures before ordering red at 30 x 40cm.
Q: When should I buy just one?
A: When you are replacing one worn sheet, or adding red to a set you already have. If red is a colour you use constantly at 30 x 40cm, the five pack works out better.
Q: Anything to watch out for with the red sheet?
A: Never let it near cooked or ready-to-eat food. If a kitchen only ever separates one thing, this is the one. At 30 x 40cm you are working on the Pro Series 270. With a single red sheet there is no spare, so the replacement has to be planned rather than assumed.
Q: How should I store my 30 x 40cm sheets?
A: Standing up and apart so they dry properly. Stacked flat they stay damp between the layers, and a damp sheet is not a clean one. Profboard do not make a holder for this size. Stand them separated somewhere they can dry rather than stacking them in a drawer. A single red sheet at 30 x 40cm still needs to stand rather than lie flat.
