QUALITY AT A LOWER PRICE
Now working in the kitchen is even more fun! You can choose between a wide range of different knife shapes to suit your cutting tasks. Most of the types from the ProDynamic series are available with different handle colours and ensure compliance with HACCP guidelines.

STEEL QUALITY
The steel X55CrMo14 is the heart of the series. The laser-tested cutting edge guarantees a sharp edge and thus a consistently good cutting performance. This means you cut cleanly and don't crush your food. This preserves valuable ingredients and flavours of your food.

ERGONOMIC HANDLE
The full plastic handle is optimally adapted to your hand. The softer plastic handle gives you a comfortable feeling when cutting and the handle feels light and secure in your hand. The thumb rest optimises the grip when reaching over to weigh and chop. Your knife fits comfortably in your hand so you can work efficiently and accurately.

QUALITY
Each knife is inspected at the end of the production process against F. DICK's high quality standards. The blade spine is rounded, preventing cuts when you need to reach over. The knife falls from the back position and therefore increases work safety in accordance with the standards of the employers' liability insurance association.

KNIFE CARE
All F. DICK knives deserve special care and attention when it comes to maintenance. Proper knife care is crucial. Knives that are forged or have a wooden handle should never be cleaned in the dishwasher. Knives with plastic handles are completely dishwasher safe; however cleaning in a dishwasher is much more aggressive than washing by hand.

The use of highly concentrated detergents, leaving the knives in hot steam for a long time and also the presence of certain food residues can lead to pitting on the blades or even corrosion. We recommend clean the knife by hand with a soft cloth and a mild alkaline detergent. Wipe your knife after cleaning to ensure that tit is thoroughly dry – this will prevent any pitting on the blade. You can occasionally maintain knives with wooden handles with food-safe oils (e.g. olive oil). The oil makes the handle nice and smooth and prevents shrinkage and cracks.

PROFESSIONAL KNIFE STORAGE
For your safety and to protect the cutting edges of the blades, we recommend that you store the knives in a suitable knife block or on a magnetic rail. When buying a knife block, make sure you buy one with enough space and horizontal slots to protect the knife blades. We recommend our own blade guard for storage in a drawer - Edge Guard. or alternatively, dimensionally accurate compartments built into the drawer.

BLADE GUARD FOR KNIVES
Blade guard – Edge Guard, the special blade guard for storage, especially in drawers. Click here to see the blade guard for blades up to 26 cm.

KNIFE BLOCK FOR KNIVES
Knife block: Knife block with tourne knife, paring knife, boning knife, carving knife, bread knife, chef's knife, meat fork, sharpening steel and kitchen shears.

HOW DO KNIVES STAY SHARP FOR A LONG TIME?
Knives stay sharp for a long time if they are only used for their intended purpose. The knives should only be used for cutting and not chopping.
Bones or the like should therefore only be cut with a cleaver.

WOODEN OR PLASTIC CUTTING BASES
Hard surfaces such as stone (e.g. marble) or glass should not be used as a base, as they quickly blunt the knives.

FAQ

FAQ

People Also Ask:

Q: What is the F. Dick ProDynamic Filleting Knife Flex 8.5" best for?

A: The F. Dick ProDynamic Filleting Knife Flex 8.5" is designed for precision filleting, skinning, and trimming of fish and other delicate proteins. Its flexible blade follows the natural contours of fish, allowing cleaner cuts with less waste. This makes it particularly useful when separating fillets from the backbone, removing skin, or trimming silver skin and connective tissue. For seafood counters, restaurants, fish processors, and culinary schools, a flexible filleting knife provides more control than a rigid utility or chef knife when working close to bones and delicate flesh.

Q: Who should use the F. Dick ProDynamic Filleting Knife Flex 8.5"?

A: This knife is well suited to seafood professionals, chefs, butchers, culinary students, and serious home cooks who regularly prepare fish. The ProDynamic series is positioned as an accessible professional line that delivers practical performance without the cost of premium forged collections. That makes it attractive for kitchens that need dependable daily use knives across multiple workstations. Operations that process fish regularly will benefit most from the flexibility and maneuverability of this blade style.

Q: Can the F. Dick ProDynamic Filleting Knife Flex 8.5" handle large fish?

A: Yes. The 8.5-inch blade length provides sufficient reach for many medium and large fish species. The longer blade allows smoother slicing strokes, which helps maintain presentation quality while reducing unnecessary sawing motions. For commercial seafood preparation, the blade length strikes a balance between precision and productivity.

Q: Is the F. Dick ProDynamic Filleting Knife Flex 8.5" suitable for beginners or professionals?

A: It is suitable for both. Professional users appreciate the knife's purpose-built flexibility and efficiency, while culinary students and developing cooks benefit from the ProDynamic series' straightforward, functional design. Because the series focuses on practical performance and ergonomics, it is often a logical entry point into professional-grade cutlery.

Q: Can this knife be used for trimming meat as well as fish?

A: Yes, within appropriate applications. While primarily designed for fish processing, the flexible blade can also be effective for trimming fat, silver skin, and connective tissue from meat cuts. Users should still select the correct knife type for heavy butchery tasks where a stiffer boning knife may provide better leverage.

Q: How does the flexible blade improve filleting performance?

A: A flexible blade bends slightly during cutting, allowing it to follow bones and contours more closely. This improves yield by helping users recover more usable product while reducing accidental gouging of delicate flesh. For fish preparation, flexibility is often one of the most important characteristics of a dedicated filleting knife.

Q: What results should users expect from the F. Dick ProDynamic Filleting Knife Flex 8.5"?

A: Users should expect controlled, precise cuts when skinning, trimming, and filleting fish. The knife is designed to improve maneuverability around bones and joints while supporting cleaner presentation and more consistent portions. When properly maintained, it becomes a reliable daily prep tool for seafood-focused workflows.

Q: Is the ProDynamic series durable enough for commercial kitchens?

A: Yes. The ProDynamic range is positioned as a professional workhorse series intended for repeated daily use in commercial environments. Its appeal comes from practical utility, dependable handling, and accessibility for organizations that need multiple professional-grade knives.

Q: What foods can the F. Dick ProDynamic Filleting Knife Flex 8.5" be used on?

A: The knife is primarily intended for fish and seafood preparation. It can also be used for trimming poultry, removing silver skin from meat, and performing other precision protein-processing tasks where flexibility is beneficial. Its geometry is optimized for detailed cutting rather than general-purpose chopping.

Q: Does the F. Dick ProDynamic Filleting Knife Flex 8.5" work well alongside other ProDynamic knives?

A: Yes. Many kitchens build complete workstation kits using multiple knives from the ProDynamic series, selecting specific blade shapes for individual tasks. A filleting knife complements chef knives, carving knives, utility knives, and paring knives within the same workflow.

Q: What maintenance accessories pair well with this knife?

A: Sharpening steels and professional knife-care tools are the most important accessories. F. Dick is widely recognized for offering both knives and sharpening systems, helping users maintain edge performance over time. Regular honing and proper storage help maximize service life and cutting consistency.

Q: Is the F. Dick ProDynamic Filleting Knife Flex 8.5" comfortable for extended prep sessions?

A: It is designed for professional use where repetitive cutting is common. The ProDynamic series emphasizes practical ergonomics and secure handling, helping reduce fatigue during longer preparation periods. This makes it suitable for seafood counters, processing environments, and restaurant prep stations.

Q: Is this knife easy to control when making delicate cuts?

A: Yes. The combination of a narrow blade profile and flexible construction helps users perform precise movements around bones, skin, and delicate flesh. This level of control is one reason filleting knives remain a dedicated category within professional kitchens.

Q: What is included with the F. Dick ProDynamic Filleting Knife Flex 8.5"?

A: The product includes the filleting knife itself. Any additional accessories, storage solutions, or sharpening tools are typically purchased separately unless specifically stated by the retailer. Many professional users select sharpening and storage accessories based on their existing workflow requirements.

Q: Why choose a ProDynamic filleting knife instead of a general-purpose chef knife?

A: A dedicated filleting knife offers significantly better flexibility and maneuverability around fish bones and skin. While a chef knife can perform many kitchen tasks, it cannot typically match the precision and control of a purpose-built filleting blade. For operations processing fish regularly, the specialized design improves efficiency and consistency.

Q: How does the F. Dick ProDynamic Filleting Knife Flex 8.5" compare to the F. Dick Red Spirit Filleting Knife Flex?

A: Both are designed for filleting and trimming applications. The primary difference is series positioning. ProDynamic focuses on practical, value-oriented professional performance, while Red Spirit is positioned as a more premium professional collection with a distinctive design identity. Users choosing between them are often deciding between budget priorities and premium series preferences rather than fundamentally different knife functions.

Q: How does the F. Dick ProDynamic Filleting Knife Flex 8.5" compare to a boning knife?

A: A filleting knife prioritizes flexibility, while a boning knife often provides more rigidity and leverage. For fish preparation, the flexible filleting blade generally delivers superior contour-following performance. For heavier meat fabrication tasks, a boning knife may be the better choice. Many professional kitchens use both.

Q: Is the F. Dick ProDynamic Filleting Knife Flex 8.5" a good choice for culinary students?

A: Yes. The knife provides access to a professional-grade tool without requiring investment in a premium forged series. Its practical design allows students to develop proper fish-fabrication techniques using equipment commonly found in professional kitchens.

Q: Is the F. Dick ProDynamic Filleting Knife Flex 8.5" reliable in high-volume seafood operations?

A: Yes. The ProDynamic line is intended for repeated professional use and is frequently positioned toward commercial environments that require dependable daily performance. Its flexibility and practical construction support efficient processing during busy production periods.

Q: Is the F. Dick ProDynamic Filleting Knife Flex 8.5" a good option for serious home cooks?

A: Yes. Home cooks who frequently prepare whole fish or large seafood portions will appreciate the control and precision of a dedicated filleting knife. It offers many of the handling benefits valued by professionals while remaining approachable and practical for non-commercial users.
