A: The AMT roasting dish measuring 33 x 21 x 6cm. It is a rectangular lid matched to that dish footprint and does not fit round pans.
Q: Why cover a roasting dish?
A: To hold moisture during the long stage. Covered, the contents effectively braise and stay moist; uncovered, they roast and colour. Most large cuts want both, in that order.
Q: Can I see when to uncover without lifting the lid?
A: That is the value of glass here. Roasting is judged by colour and by how much liquid is left, and both are visible through the lid without releasing the heat you have built up.
Q: Does a lid change roasting times?
