A: The AMT fish pan at 35 x 24cm. It is an elongated footprint rather than a diameter, so it does not interchange with the round glass lids at any size.
Q: What is an 18/10 rim?
A: 18/10 refers to stainless steel containing 18 percent chromium and 10 percent nickel, a grade chosen for corrosion resistance. On a lid rim that matters because it takes the wear of repeated seating and cleaning.
Q: Why is covering a fish pan useful?
A: Because fish is easily overcooked and easily dried. A lid lets it cook gently in its own steam, which is far more forgiving than direct heat on both sides.
Q: Should fish be cooked covered throughout?
